Wolf GR606F French top not getting hot?

Most often it is working, and the way it works catches people out. The French top has one setting rather than a dial, it wants half an hour before it is ready, and it is hottest under the centre plate and mildest at the rim by design. Cold after all three of those, and it is worth ringing Wolf Repair Denver on (720) 575-1433.

A French top is a way of cooking before it is a piece of hardware, and that is why so many calls about one turn out to be about method. It is a single plate over a single burner, graded from hot in the middle to gentle at the edges, so a stockpot sits out at the rim all afternoon while a pan for searing goes over the centre. There is nothing to set except whether it is on.

What that means for a repair visit is simple enough. If the graded heat is there and only the middle is missing, the burner beneath the centre plate is the suspect. If the whole slab stays cold after a proper preheat, it did not light. Anything in between is usually a question of time, and half an hour is longer than it feels while you are waiting on it.

What it usually turns out to be

Every figure below is a band, not a quote. The fault is found first, the number is agreed with you second, and nothing is ordered until you have said yes to it.

  • The outer part of the plate never gets properly hot

UsuallyIt is not meant to. Wolf grades this surface deliberately, hottest under the centre and cooler towards the edges, so the pan is moved inwards for more heat and outwards for less. The zones are the control here, not the knob.

  • Very little happens in the first twenty minutes

UsuallyWolf asks for thirty minutes of preheating on this surface, and a slab of iron takes every one of them from cold. A cook who is used to a burner under a pan will call that broken at minute fifteen. Give it the half hour first.

  • The control has nothing on it except off and high

UsuallyThat is right, and it surprises everybody. The knob chart gives the French top two positions, off and Hi, exactly as it does the charbroiler. Where the pan stands decides the temperature, which is the whole idea of cooking on one.

What it costs Nothing — the range is behaving as built

  • The middle of the plate is as cool as the rim

UsuallyThis is the version that does point at hardware. The burner for this surface sits underneath the centre plate, so a middle that will not come up when everything else has been done properly is a burner and ignition question, and it is measured.

Quoted from Quoted after the diagnosis

  • Ticking carries on underneath the plate

UsuallyThe igniter clicks until the burner catches, and clicking that does not stop means it has not caught or is not being seen to have caught. Either way that is a bench job on the ignition parts rather than anything to do with the surface above.

Still wondering

Can I cook food straight on the French top?

No, and Wolf says so plainly: always use cookware, never put food directly on the surface. The plate is seasoned and kept oiled to protect it, which only works if nothing is cooked on it. Pans move in towards the middle for heat and out towards the rim for gentleness.

Does the centre plate come out?

It does. Wolf supplies a centre plate hook with the range for lifting it, and the instruction that goes with it matters more than the tool: never take the plate out while you are cooking. Underneath it is the burner that heats the whole surface, which is why it lifts at all.

What is worth checking before I call somebody out?

Three things, in order: that the knob is fully at Hi, that it has had a real thirty minutes, and that the pan has been tried nearer the centre. If the plate is still not performing after all of that, ring Wolf Repair Denver and say how long you gave it.
