Why does my Wolf range simmer hotter in Denver than it did at sea level?
Thinner air. The same orifice passes the same gas but there is less oxygen around it, so the flame burns longer and lazier and the low setting sits higher than the dial suggests. The fix is not a new range — it is checking manifold pressure at the regulator and, where the model calls for it, fitting the orifice set specified for this elevation.
The burner clicks and clicks on a cold morning, then lights fine at night. What is that?
Almost always moisture or grease bridging the spark gap on a cold electrode, or a ceramic that has hairline-cracked and is leaking spark to the burner body. Cleaning and regapping settles most of them. A spark module that fires on every burner at once is a different fault and needs the module read, not cleaned.
My steam oven throws a fault and stops filling. Is it broken?
Usually it is scale. Denver water is hard enough that an inlet valve and the level sensor behind it will crust over inside a couple of years if the descale cycle has never been run. We clear the valve and the sensor, run the cycle with you watching, and tell you how often to repeat it for the water you actually have.

Sometimes. More often it is the duct: an oversized blower fighting three unnecessary bends in flexible pipe makes noise instead of airflow. We measure what the run is actually moving before quoting a motor, because a new blower on a bad duct is a louder version of the same problem.
Do you work on Wolf refrigeration?
No. Wolf is cooking equipment — ranges, wall and steam ovens, cooktops, hoods and downdraft vents — and that is all this shop does. Built-in refrigeration is a different trade with different gauges, and we would rather tell you that than guess at it.

Induction top stopped reading my pans on two zones — a pan symbol and nothing else. A coil connector had worked loose behind the glass. He reseated it, then tested every zone with my own pot.
