Why a Wolf range will not simmer in Denver, and what actually fixes it

A low flame that still scorches is usually altitude, not a broken range. What thin air does to combustion at 5,280 feet, the four faults behind a runaway simmer, and what to check before calling anyone.

There is a specific complaint that arrives from Denver kitchens more than anywhere else, and it is almost always described the same way: the range is beautiful, the sear is superb, and it cannot hold a simmer to save its life. Chocolate splits. A béchamel catches in ninety seconds. The lowest notch on the dial still produces a rolling boil in a heavy pan, and the owner has usually spent a year assuming they are doing something wrong.

They are not, and in most cases neither is the range. What is wrong is that the appliance is still set up for the altitude it was tested at, which is roughly a mile below the one it is now cooking at.

What thin air does to a low flame

A gas burner is a fixed-volume device. The orifice — a brass jet with a drilled hole a fraction of a millimetre across — passes a set volume of gas at a set pressure, and the burner head mixes that gas with whatever air it can pull in around it. A cubic foot of Denver air, drawn in at 5,280 feet, holds roughly seventeen per cent less oxygen than the same cubic foot down at sea level.

Feed a sea-level quantity of gas into thin air and the mixture goes rich. A rich flame burns lazily: it is taller, softer, less blue, and it gives up its heat over a longer distance instead of concentrating it at the pan base. At full output you barely notice, because a big burner has enough excess capacity to overwhelm the difference. At the bottom of the range’s output, where the flame is supposed to be a thin ring of controlled blue, rich combustion means the flame will not stay small and stable. It sits higher than it should, it wanders, and the heat reaching the pan is far more than the dial suggests.

That is why the fault shows up as a simmer problem and nothing else. The sear is fine. The boil is fine. Only the bottom two hundred degrees of the range’s range is wrong.

The four things it usually turns out to be

In order of how often we find them:

  1. Orifices never changed for elevation. The most common single cause, and the most common thing a builder installation skips. Every Wolf gas range has a documented orifice set for high-altitude natural gas or propane. If nobody swapped them, the range is running rich at every setting and unusable at the lowest.
  2. Manifold pressure never verified. The regulator on the range should deliver a specific pressure in inches of water column, and incoming line pressure in a house with several gas appliances is not always what the sticker assumes. Without a manometer reading, orifice sizing is guesswork on top of guesswork.
  3. The bypass not set. Inside each valve is a small screw that sets the minimum gas flow when the knob is at its lowest stop. It is adjusted at the factory to suit the factory’s orifice. Change one and not the other and the low setting is still wrong.
  4. A burner head not seated, or ports partly blocked. Grease and boil-over crust the ports nearest the electrode first. A partly blocked crown makes the flame uneven and lazy in exactly the way a rich mixture does, so it gets misdiagnosed as an altitude problem when it is really a cleaning problem.

Only the last of those is something you can meaningfully do yourself, which is worth saying plainly rather than pretending otherwise.

What you can check in ten minutes

Take the grate off and lift the burner cap. Look at the crown: the small drilled ports should be open and evenly spaced, with no crust ringing them. A stiff brush and a paperclip clear them; never drill or file a port, because changing its size changes the flame permanently.

Check the cap is properly seated. Wolf caps drop onto a machined seat and it is easy to leave one a millimetre proud after cleaning, which lets gas escape sideways and makes the flame lean.

Now light the burner and look at the flame with the kitchen lights down. You want mostly blue with a soft, slightly luminous tip. Sharp yellow tips across the whole crown, or flames that lift away from the ports and flutter, are combustion faults rather than dirt. Turn to the lowest setting and watch for thirty seconds: a correct low flame is small, steady and continuous all the way round. A flame that keeps growing back up, or that goes out and relights itself, is telling you the low end has never been set.

Finally, check the obvious mechanical things before assuming physics. The flexible connector behind the range should not be kinked, and the shutoff valve at the wall should be fully open — we have found a half-closed wall valve behind a bungalow range more than once, and the symptom looked exactly like a starved burner.

What we do on the call

Manometer on the regulator first, because everything downstream depends on that number. Then the orifice set is identified against the model and the fuel, and compared with what is actually fitted — which is a five-minute job with the caps off and frequently the whole answer.

Where orifices are wrong they are changed as a set, not one burner at a time, because a range with two sizes in it becomes impossible to cook on predictably. Then each valve’s bypass is set with the burner lit, working from the smallest burner up, and every burner is checked through its full travel with a pan on it. The last step is the one that matters to you: a real simmer, held for several minutes, watched rather than assumed.

If a burner still will not behave after all that, the fault is mechanical — a worn valve stem, a cracked electrode leaking spark into the burner body, or a damaged crown — and that gets quoted as a part with the price agreed before it is ordered.

When it is worth calling

If the range has never simmered properly since it was installed, call. That is an altitude setup that never happened, it is a single visit, and it changes the appliance permanently.

If the simmer used to be fine and has drifted, start with cleaning: crusted ports and a poorly seated cap account for a good share of those, and you can fix both with a brush this evening.

If you smell gas at any point, or a burner is lighting with a bang loud enough to hear from another room, do not work through a checklist. Shut the wall valve, ventilate the room, and call. Delayed ignition is gas collecting before the spark reaches it, and it is the one symptom on this page that is not worth living with for another week.

Follow-up questions

Does every Wolf range need re-jetting in Denver?

Not every one, but most that were installed by a builder without an altitude check. Wolf publishes orifice sizes by fuel and elevation, and the pressure regulator has an adjustment range. What matters is that somebody measured — a range that was set at the factory for sea level and never touched will burn rich here whether or not it looks fine.

Can I fix a hot simmer by turning the burner down further?

No, and it is worth knowing why. The lowest setting is limited by a bypass screw inside the valve, not by how far the knob travels. Once you are at the stop, the only ways down are the bypass, the orifice and the manifold pressure — all three of which are set with a gauge rather than by feel.

Is a yellow flame dangerous or just inefficient?

Both, in different amounts. Yellow tips mean incomplete combustion, which means carbon monoxide and soot. On a well-ventilated cooktop it is mostly a nuisance and a dirty pan problem, but a burner that has gone yellow across the whole crown, or one that yellows in a closed kitchen, should be looked at rather than lived with.
